Rapid cooling of hot bones trimmings – stage 4

This project trialled a nitrogen tunnel freezer at a Queensland-based red meat processing plant to achieve efficient chilling of hot boned beef trim direct from the carcase, prior to packaging. 

As part of the project, the tunnel was tested using different flow rates, nozzle configuration and belt speeds to reach optimal results. 

The tunnel is now in full production and operating as design with desired cooling rates achieved.
