Review of meat hygiene assessment (process monitoring)

This project, led by SARDI in collaboration with industry participants and the Department of Agriculture Fisheries and Forestry, has informed a revised Meat Hygiene Assessment 3: Process Monitoring system.

The revised system focuses on risk-based monitoring, streamlined data review processes, and eliminates scoring systems to prioritise actionable insights and operational improvements. The next step is to conduct feasibility trials that, once completed and when the system is taken up by processors, will promote consistent, data-driven resource allocation and efficiency across the meat processing industry.
