The future of red meat processing

AMPC invites red meat processors and industry participants from across Australia to attend the inaugural AMPC Innovation Showcase. 

The three-day event will be held from Tuesday 11 October to Thursday 13 October at the Victorian Pavilion, Melbourne Showgrounds and will explore the theme -  “The future of red meat processing”. The theme highlights the importance of adopting innovative solutions to build a stronger and more sustainable red meat processing industry.

The Showcase will bring together red meat processors and industry participants from across Australia to experience new innovative ideas and technologies from AMPC’s research and development providers and hear and learn from world-class speakers, listen in to panel sessions, and participate in various workshops.

Keynote speakers Chris Riddell and Michael McQueen will deliver presentations on innovation and transformation and bullet-proofing business models in turbulent times alongside ABC Landline host Pip Courtney as MC and bestselling author Sam Bloom as the special guest at the welcome event.

We have an exciting line up of international and domestic speakers. Panel sessions will also include technical experts, processors, and AMPC program managers. International speaker and President and CEO of 3C Software, Matthew Smith will be joined by Tyson Meats USA virtually to explore maximising carcase value, while CSIRO Principal Scientist Stefan Hajkowicz will present on global mega trends as part of the emerging market trends session.  

An extensive line-up of research and development providers will showcase the latest science and solutions as part of the R&D innovation area. Attendees will be able to see and trial equipment including the new Jarvis stunning box, BMC lamb shoulder machine, Intelligent Robotics’ semi-automated beef scribing, Scott Technology’s BladeStop, and RIM Services’ range of exo skeletons. 

Students from the AMPC NPD Academy will join Michelin star chef David Dwyer and Kilcoy Global Foods Andrew Hearnden (Andy Cooks) at the AMPC BBQ where attendees can taste test a range of new products and learn more about value-adding.

The benefits of using virtual reality training with Virtually There Training

Sean Cunial from Virtually There will discuss the benefits of virtual reality training and demonstrate several new virtual reality programs that have been created as training tools, including beef scribing, offal identification, and beef and sheep cut identification. Sean will also discuss the findings of a trial that assessed training using virtual reality vs traditional training methods.

Advanced costing systems can provide the accuracy and granularity required to drive real product mix optimisation and reduce supply chain costs. Costing variations can lead to significant opportunities to optimise carcase cut combinations, identify unprofitable customers, giving considerable savings without investing in new equipment or personnel. 

Join us to hear from leading industry and cost and profitability experts on managing and minimising costs and maximising value for meat processors, including a panel Q&A.

We will demonstrate an advanced costing system in real-time, providing various scenario modelling cost opportunities based on leading US meat processors with best-of-breed costing practices, including: 

  • How to maximise the value of a carcase.
  • Reduce margin leakage across the value chain.
  • How to manage input cost variables and increase profits.
  • Managing yield cut patterns for better supply and processing.

The Toustone team will discuss how Machine Learning can predict retention and absenteeism. This AMPC program has the potential to assist with retention and absenteeism rates for the red meat processing industry into the future.

Innovation Manager workshop

The AMPC Co-Innovation team and professional services group GHD will lead the Innovation Manager workshop. The workshop will provide an opportunity to reflect on the successes and challenges of the Innovation Manager projects and begin to chart a path for what the Innovation Manager Program will look like in the future. The sharing of insights will enable everyone, including AMPC, to learn from each other and ultimately be more innovative.
